This special chilli has a level of sharpness 4, which means that it is between 1,500 and 2,500 scoville. Many may know them from traditional dishes of Basque cuisine, as with "Poust Basquaise", a tasty chicken in tomatoes and ham. The fruity grade and the finely smoky flavors make Piment d’Espelette a sought -after spice in many international kitchens.
Thanks to its versatility, the chili variety not only fits grill meat and sauces, but also with rice and pasta dishes, salads, omelettes and fish. It can be used both during the cooking process and as topping, which makes it a perfect companion for every meal. Piment d’spelette is made from the Gorria pods, which were brought to France by seafarers in the 16th century. The harvest takes place by hand, usually in September, and the pods are hung in chains to dry before they are ground. This is done in a procedure that reflects the traditional values of the region.

Walchhofer and his team attach great importance to regionality and sustainability. The spices come from the best cultivation areas, and the packaging material is 100 percent plastic -free and comes from Austria. Exciting future projects are planned, which include further processing of the spices and workshops for the composition of spice mixtures. A spice competence center is also to be created in order to pass on knowledge about the fascinating world of spices.
